Potassium Diphosphate (TKPP) CAS NO.:7320-34-5 is used in the food industry as an emulsifier, tissue improver, chelating agent, and also as a raw material for preparing alkaline water for noodle products. It is often used in combination with other condensed phosphates to prevent the formation of bird droppings in canned seafood, prevent discoloration of canned fruits, improve the freezing and swelling degree, increase the yield of ham and sausages, improve the water holding capacity of ground fish, enhance the flavor and yield of noodles, and prevent cheese aging.
