Potassium benzoate, also known as potassium benzoate. The chemical formula KC7H5O2 · 3H2O. Molecular weight 214.26. White crystalline powder. Melting point 110 ℃ (loss of crystallization water). When heated to 110 ℃, it loses three molecules of crystalline water and becomes an anhydrous substance. Easy to dissolve in water, soluble in ethanol. The air is prone to weathering. Mainly used in fruit juice, carbonated beverages, artificial cream, artificial cream, and wine.
Application:
1. Used as a preservative in the food industry; Antimicrobial agents. Mainly used for margarine, thinned cream, and wine. Analytical reagents. Potassium benzoate is also used as a whistling agent for fireworks materials.
2. As a preservative, prepare a sweetener composition, which comprises sweeteners selected from the following: sucralose, potassium acetylsulfonate, saccharin, aspartame, stevia extract, neotame, cyclohexylaminosulfonate, momordica grosvenorii extract, polyols and mixtures thereof; Preservatives; And acid.
