Sodium carboxymethyl cellulose (CMC) has various functions in food, such as thickening, emulsification, suspension, water retention, toughness enhancement, swelling, and preservation. Its properties are unparalleled by other thickeners. When used in food, it can improve the taste, enhance the grade and quality of the product, and also extend the shelf life.
Application:
The Function of CMC in Food Production
1. Thickening: Obtaining viscosity at low concentrations. Can control the viscosity during food processing while giving food a sense of lubrication;
2. Water retention: Reduce the dehydration and contraction effect of food, and extend the shelf life of food;
3. Dispersion stability: maintain the stability of food quality, prevent oil and water stratification (emulsification), control the size of crystals in frozen food (reduce ice crystals);
4. Film forming property: Form a layer of adhesive film in fried food to prevent excessive absorption of oil and fat;
5. Chemical stability: Stable to chemicals, heat, and light, with certain anti mold properties;
6. Metabolic inertness: As an additive in food, it is not metabolized and does not provide calories in the food.
Performance of edible CMC
Compared with other similar products, "Weiyi" edible grade CMC has the following characteristics
1. Uniform molecular distribution;
2. High acid resistance;
3. High salt resistance;
4. High degree of substitution and uniform substitution;
